The second-best paella in the world is served right here in Vancouver!
At Casa Molina, our very own Chef Javier Blanc and Chef Elea Blasco competed in the 62nd edition of the Concurs, winning the second-best paella in the world, with the first prize going to a local Valencian restaurant.
After a long journey and lots of practice, they mastered the art of cooking an authentic Paella Valenciana. Using specific ingredients like wild rabbit, free-range chicken, and unique local ingredients from Valencia, they created a truly exceptional dish. We also visited Albufera Park, the main supplier of paella rice to Spain and Europe. The rice served in British Columbia is imported from Albufera by Paella Guys to ensure authenticity.
Preparing for the big day, we focused on perfecting the traditional cooking method with a wood fire pit, naranjo wood, and fresh local ingredients. The key was balancing flavours and achieving the perfect "socarrat," the crispy caramelized crust at the bottom of the pan.
On competition day, we competed against 44 professional paella cooks. Despite the tough competition, our dedication and hard work paid off with this prestigious award.
